Tempranillo is a grape variety of Spanish origin grown in Ribera del Duero and Rioja.
A variety that has adapted very well to the breezy Mediterranean climate and fresh, deep soils, such as those of Casale del Giglio, in the area called “Valle” (formerly “Riserva Bottacci”), where our “Tempranijo” has found its ideal setting.
These optimal conditions allow for complete phenolic ripening and a great body-fruit balance.
GRAPES AND VINIFICATION
Tempranillo 100%.
Obtained from grapes that have reached a rather advanced level of ripeness, sometimes with slight drying on the vine.
The vinification begins with a cold maceration for two days at 10° C., in order to favor a greater extraction of aromas from the skins.
Spontaneous and very slow fermentation starting from 16°C up to 24°C for a duration of approximately 15/18 days, with submerged cap and periodic delestages* to oxygenate the yeasts.
A further maceration phase takes place on the skins, post-fermentation, for another 12/15 days, to extract the greatest possible quantity of tannins, given that it is a variety with tannins that are generally very sweet and never in excess.
Aged in cherry tonneaux only for a small fraction that varies from 15 to 20% of the total, depending on the vintage, while the remaining part is stored in stainless steel tanks.
*Délestage : Red winemaking technique that involves the partial racking of the fermenting must. It consists of transferring part of the fermenting must into another tank and then reintroducing it from above into the original winemaker, with the aim of oxygenating the fermenting wine and dispersing the marc evenly in the tank, thus facilitating a better release of anthocyanins (color) and polyphenols (tannins) from the skins to the must.
ORGANOLEPTIC EXAMINATION
Very intense color with fruity hints of raspberry, blackcurrant and undergrowth aromas, wrapped in a sweet note of ripe morello cherry.
The taste is rich and very concentrated with spicy and fruity notes, enhanced by a significant presence of very sweet tannins.
With a long and persistent aftertaste, it is well suited to long refinement in the bottle.

Today our shop is located inside the Il Corso Shopping Center, built temporarily to deal with the emergency. At the same time, we have created a new e-commerce to allow many people throughout Italy to purchase our products. We are still here, as we once were, to represent and promote the original gastronomic tradition of Amatrice.
