The grape variety comes from Bordeaux, where it is traditionally used as a minor component in the blend of Merlot and Cabernet Sauvignon.
Petit Verdot is a late variety that has found ideal conditions in Agro Pontino, such as great brightness, persistent sea breeze and warm soils that allow the grapes to fully ripen, thus allowing it to also be offered in its pure form, a true rarity at a national level.
GRAPES AND VINIFICATION

The red winemaking process is partly done with a submerged cap to extract the sweetest tannins and partly with punching down to obtain good colour extraction.
Fermentation continues with the cap submerged for 15 days at a temperature ranging between 26–28°C.
During the initial stages of maceration, “délestage”* is carried out in order to make the tannins softer and the colour more stable.
After racking, malolactic fermentation begins, partly in stainless steel and partly in wood.
Aged in barriques for 8–12 months and in bottle for 6 months.
*Délestage: Red winemaking technique that involves the partial racking of the fermenting must. It consists of transferring part of the fermenting must into another tank and then reintroducing it from above into the original winemaker, with the aim of oxygenating the fermenting wine and dispersing the marc evenly in the tank, thus facilitating a better release of anthocyanins (color) and polyphenols (tannins) from the skins to the must.
ORGANOLEPTIC EXAMINATION
Ruby purple color; intense and persistent aromas of small red fruits, cherry and vegetal, such as myrtle and juniper.
Beautiful roundness in the mouth, due to soft and velvety tannins, with an elegant structure.
Finish with notes of white pepper and spices.
SUGGESTED COMBINATIONS
Baked lamb chops.
