Product Description

Jurançon grape variety, an area close to the French Atlantic Pyrenees. Superior form of Gros Manseng, it has particularly small berries with thick skin, which produce small quantities of must and can remain on the plant until late autumn, so as to concentrate the sugar with a drying process called “passerillage” in French.
Interest in the potential of this variety is constantly increasing in our Agro Pontino, where it is born in Le Ferriere (Latina) about 50 km south of Rome.

GRAPES AND VINIFICATION

100% Petit Manseng from well-ripened grapes which, however, retain an excellent acidity level which guarantees maximum varietal expression.
White vinification with short cold maceration (7–8° C.) for 10–12 hours.
Very slow and soft pressing, with maximum respect for the fruit, followed by natural static decantation of the must at 14–16° C.
Spontaneous start of fermentation (to enhance the varietal and aromatic characteristics) with yeast inoculation on the second day of fermentation.
After 10 days, once the fermentation is finished (which took place at 18–20° C), the new wine is racked and cooled to avoid malolactic fermentation.
Bottling around March/April, after a long stay on the yeasts.

ORGANOLEPTIC EXAMINATION

Bright straw yellow colour, very intense, aromatic and spicy aroma; fresh, very mineral, savoury taste, excellent structure

WHO WE ARE

Always for Amatrice

For over 20 years we have been selecting and bringing the best products of our land to the tables of families. After the earthquake of August 24, 2016, we were forced to completely reorganize our business, facing numerous difficulties. Courage, support and love for our city have allowed us to move forward with the same determination as before. Today our shop is located inside the Il Corso Shopping Center, built temporarily to deal with the emergency. At the same time, we have created a new e-commerce to allow many people throughout Italy to purchase our products. We are still here, as we once were, to represent and promote the original gastronomic tradition of Amatrice.
