HARVEST Mid-September.

FERMENTATION The careful selection of the grapes is followed by a soft pressing with an immediate lowering of the temperature, for the decantation of the suspended substances present in the must. The fermentation takes place in steel tanks at a controlled temperature between 13 and 15° C. The subsequent refinement continues until February in steel tanks thermo-conditioned at a constant temperature of about 10° C, to preserve its aromatic heritage.

For over 20 years we have been selecting and bringing the best products of our land to the tables of families. After the earthquake of August 24, 2016, we were forced to completely reorganize our business, facing numerous difficulties. Courage, support and love for our city have allowed us to move forward with the same determination as before.
