Product Description

PRODUCTION AREA: Organically managed vineyards of Offida and Castel di Lama.
GRAPE VARIETY: Passerina 100%.
AVERAGE ALTIMETRY: 200-300 meters above sea level
SOIL: Medium texture tending towards sandy.
TRAINING SYSTEM: Guyot.
PLANTING DENSITY: 5,000 vines per hectare.
YIELD PER HECTARE: approximately 80 quintals of grapes.
HARVEST: End of September. Hand-picked.
FERMENTATION: A careful selection of the grapes allows us to dedicate only the best bunches to the production of this wine. The soft pressing is followed by an immediate lowering of the temperature, to favor the decantation and the elimination of the suspended substances present in the must. The fermentation takes place in steel tanks at a controlled temperature, between 13 and 15 °C. The subsequent refinement, which continues until February of the year following the harvest, takes place in thermo-conditioned steel tanks, designed to guarantee a constant temperature of about 10 °C necessary to preserve its aromatic heritage.

Always for Amatrice

For over 20 years we have been selecting and bringing the best products of our land to the tables of families. After the earthquake of August 24, 2016, we were forced to completely reorganize our business, facing numerous difficulties. Courage, support and love for our city have allowed us to move forward with the same determination as before. Today our shop is located inside the Il Corso Shopping Center, built temporarily to deal with the emergency. At the same time, we have created a new e-commerce to allow many people throughout Italy to purchase our products. We are still here, as we once were, to represent and promote the original gastronomic tradition of Amatrice.
