Product Description

RED LAZIO IGT/IGP

A vine of Bordeaux origin, mainly grown in the Médoc area. It is undoubtedly one of the most renowned varieties in the world for the production of high quality and long-lived wines.
It is often used in blends with Cabernet Franc and Merlot.
In Italy there are many versions of it, both pure and with other red grape varieties.
It has great capacity to adapt to the most diverse climatic conditions, maintaining its recognisable characteristics, while also perfectly expressing those of the terroir of origin.

GRAPES AND VINIFICATION

Produced exclusively from Cabernet Sauvignon grapes, selecting the most mature ones, with low yields per vine.
Red vinification with punching down during the maceration phase, in order to extract colour together with most of the polyphenolic substances.
Once the tumultuous fermentation is complete, the new wine is kept in contact with the skins for a few more days, to encourage the extraction of the finest tannins thanks to the presence of alcohol.
After careful racking, with the draining marc moved only by gravity, malolactic fermentation follows in the tank.
Once biological stability has been achieved, it is left to mature in small oak barrels for 18–20 months.
It is then refined in the bottle for 8–12 months.

ORGANOLEPTIC EXAMINATION

It has an intense ruby ​​color, with aromas of raspberry, black cherry, cassis, balsamic hints of juniper, moss and undergrowth.
In the mouth it is elegant, soft and rich, with a complex finish.

SUGGESTED COMBINATIONS

Pecorino Romano, medium-aged, unsalted.
