The Aquilano flat salami is produced in an artisanal way according to the ancient family tradition in Poggio Cancelli, a hamlet of Campotosto, with the best pork meats, natural flavours without the addition of preservatives and chemical additives, just like the other house specialities, which owe their unmistakable flavour to smoking with oak and beech wood, natural seasoning and the particular microclimate of the area.
Medium-finely ground salami stuffed into natural casing, placed under pressure, first hung on wooden racks for drying.
It is a fragrant, non-spicy salami, with the presence of whole peppercorns.

For over 20 years we have been selecting and bringing the best products of our land to the tables of families. After the earthquake of August 24, 2016, we were forced to completely reorganize our business, facing numerous difficulties. Courage, support and love for our city have allowed us to move forward with the same determination as before. Today our shop is located inside the Il Corso Shopping Center, built temporarily to deal with the emergency. At the same time, we have created a new e-commerce to allow many people throughout Italy to purchase our products. We are still here, as we once were, to represent and promote the original gastronomic tradition of Amatrice.
