Montanaro was born among the peaks of the Amatrician mountains. The ancient shepherds who moved during the transhumance period used to exchange advice and practices for the production of their cheeses and it is precisely among these mountains that Montanaro was born.
It is a cheese made with the addition of sweet rennet, whose meticulous maturation allows it to refine its strong flavor. Externally it has a rind that ranges from straw-yellow to brick-colored. Optimal maturation from 6 months. This cheese is distinguished by the delicacy of its aroma. At the first taste it will seem that it almost melts in the mouth leaving a pleasant sensation. It has a semi-cooked, crumbly paste, with a light hole, with a bright white color due to the presence of the mesophilic ferment.

After the earthquake of August 24, 2016, we were forced to completely reorganize our business, facing numerous difficulties.
